Pete's chili

 Pete's Chili

### Ingredients
- 1 onion, diced
- 3 bell peppers (red and orange), diced
- 1 lb ground beef
- Salt and pepper, to taste
- 1 tbsp sugar
- ½ tsp cayenne pepper
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp paprika
- 1½ tbsp chili powder
- 2 tsp cumin
- Water (as needed)
- 1 can red enchilada sauce
- 1 can red or black beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 can diced tomatoes

### Instructions
1. In a pot, soften the diced onion and bell peppers over medium heat.
2. Add the ground beef and brown it, breaking it up as it cooks.
3. Stir in the following seasonings:
   - Salt and pepper to taste
   - Sugar
   - Cayenne pepper
   - Oregano
   - Garlic powder
   - Paprika
   - Chili powder
   - Cumin
4. Add enough water to achieve your desired consistency.
5. Stir in the red enchilada sauce, drained beans, and diced tomatoes.
6. Let the chili simmer, allowing it to thicken and the flavors to meld, about 20-30 minutes.

### Serving
Serve hot with cornbread. Enjoy!
