Pickled red onion

Pickled red onion

Ingredients:

1 med/ large red onion
1 cup water
1/2 cup white vinegar
2 tbsp sugar
2 tsp salt

*extra ingredients*
2 tbsp minced garlic
2 tbsp peppercorn
2 tbsp mustard seed

Boil the water and add the sugar and salt. Stir until dissolved.
Add the vinegar.

Thinly slice the onions and place in a glass jar. Pour the pickling solution into the jar covering the onions. Tighten lid and leave to cool for an hour on the counter.
Refrigerate after up to a week.

Can be eaten after cooling.
