Non-Creamy Coleslaw Recipe

### Ingredients

- **For the Slaw:**
  - 4 cups green cabbage, finely shredded
  - 2 cups red cabbage, finely shredded
  - 1 cup carrots, grated
  - 1 cup bell peppers (any color), thinly sliced
  - 1/2 cup green onions, chopped

- **For the Dressing:**
  - 1/4 cup apple cider vinegar
  - 2 tablespoons olive oil
  - 1 tablespoon honey or maple syrup
  - 1 teaspoon Dijon mustard
  - Salt and pepper to taste

### Instructions

1. **Prepare the Vegetables:**
   - In a large bowl, combine the green cabbage, red cabbage, carrots, bell peppers, and green onions.

2. **Make the Dressing:**
   - In a small bowl, whisk together the apple cider vinegar, olive oil, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.

3. **Combine:**
   - Pour the dressing over the vegetable mixture and toss until everything is evenly coated.

4. **Chill:**
   - Let the coleslaw sit for at least 30 minutes in the refrigerator to allow the flavors to meld.
